These muffins have a few more ingredients and steps than my previous recipes, but they’re worth it! This recipe made 24 muffins, and they were all gone in less than 24 hours.

Let’s get started!

Gather your ingredients

Here’s what you’re going to need – it’s quite a list, but trust me, it’s worth it!

  • 5 eggs
  • 3 tbsp sugar
  • 2c sugar
  • 8oz cream cheese, softened
  • 3c AP Flour
  • 1tsp cinnamon
  • 1tsp nutmeg
  • 1tsp cloves (ground)
  • 1tsp salt
  • 1tsp baking soda
  • 2c pumpkin
  • 1 1/4c vegetable oil
  • toppings if you want (nuts or pumpkin seeds maybe?)

You’re going to mix your softened cream cheese with one egg and 3 tablespoons of sugar.  Then stick your bowl in the freezer for up to an hour.  That’ll give you plenty of time to get your oven preheated to 350 degrees and get your dry ingredients combined.

I love the color that these dry ingredients make once they’re mixed.  There are so many spices stirred in with the flour that it turns into a lovely, fragrant, speckled mixture.

After those ingredients are combined, you’ll beat your wet ingredients with your trusty hand mixer.  Make sure your eggs are very well mixed with your oil and pumpkin puree.  Then pour your wet ingredients in to your dry mixture, and stir until just combined.

Fill your muffin liners about halfway full.

Then grab your cream cheese mixture out of the freezer, and add dollops on top of your muffin batter.

Top the cream cheese mixture with a little more muffin batter, then stick them in your oven for 20-25 minutes, or until a toothpick comes out clean.  While they’re cooking, you enjoy the aroma flooding out of your oven and think about all of the other pumpkin spice loves in your life…

When your muffins are finished baking, let them cool for 5-10 minutes, and then eat your heart out.  You earned it!  Just be aware that these seem to attract other people and you may have to fight them off.  Or make more.

  2. These look so good! And I almost grabbed the pumpkin chapstick the other day, but my husband is not a fan of pumpkin anything! 🙁
