Matt and I struggle with our weight. I know that probably doesn’t come as a surprise, especially since we’ve blogged heavily about sweet treats (like pecan pie, cake mix cookies, best-ever buttercream and chocolate chip skillet cookies to name a few.)
But we have 3 little kiddos and we would really like to get healthier so we can be more active with them. So we have embarked on a new(ish) journey. We have decided to go low carb.
I know what you’re thinking. “Low Carb?! Are you insane? You’re a baker!”
Worry not, my dear friends! Because I know lots of you who just love our baking recipes, as do I! So I’m going to make you two promises.
Pizza is always a favorite around our house, as it should be.
But you know what’s even better than pizza?
I know that probably wasn’t going to be your answer. The obvious answer would be two pizzas, some breadsticks, and a big cold Dr. Pepper (any other drink is UNACCEPTABLE, y’all).
But no, it’s not those things. It’s Christmas Pizza. Look, I know what you’re thinking. Christmas Pizza? Really? Like pine tree pizza or sugar cookie pizza? No. Though sugar cookie pizza is totally acceptable and awesome in its own right but that’s another post. It’s just pizza, but made in awesome Christmas shapes. You might not be impressed with this, but trust me – your kids are gonna love it.
Peppermint Bark is synonymous with Christmastime. Almost every holiday party I attend has a plateful of Peppermint Bark, and it’s always gone by the end of the shindig.
The combination of milk chocolate, white chocolate, and peppermint is just perfect, and it’s something that anyone can make!
Down here in Texas, we know how to do two things really well.

2.) Pecan Pie
In case you don’t know, Pecan Pie (pronounced puh-kahn, y’all, and don’t try to tell us otherwise) is a sweet, delectable southern treat that is to die for.
And it is so easy to put together, you can be ready in less than one hour to give your mini pecan pie to your friends, family, neighbors, co-workers, kids’ teachers…well, you get the picture.

I mean, who doesn’t love a warm, gooey chocolate chip cookie straight from the oven? The only thing that could make it better is if it was topped with a scoop of ice cream and a drizzle of chocolate syrup. And we can attest to how good this one is, because that picture you see up there? Yeah, it’s gone now. Like it took less than an evening.
